I know it’s been a while since I’ve sent something your way, but I promise today’s recipe is worth the wait! If you love cinnamon rolls and pancakes, this recipe is the perfect marriage of the two. It’s easy to make and will fill your kitchen with the cosiest aroma. Sunday brunch inspo sorted!
Fluffy Pancakes + Sweet Cinnamon Swirls = Pure Bliss
Ingredients (serves 4)
For the Pancakes:
1 ½ cups all-purpose flour
3 ½ tsp baking powder
1 tsp salt
1 tbsp sugar
1 ¼ cups milk
1 egg
3 tbsp melted butter
For the Cinnamon Swirl:
¼ cup melted butter
½ cup brown sugar
1 tbsp ground cinnamon
For the Cream Cheese Glaze:
4 tbsp cream cheese (softened)
1 cup powdered sugar
2 tbsp milk
½ tsp vanilla extract
Instructions:
Prepare the Cinnamon Swirl:
Mix melted butter, brown sugar, and cinnamon in a small bowl
Pour the mixture into a piping bag or a zip-top bag and snip off a small corner
Make the Pancake Batter:
In a large bowl, sift together flour, baking powder, salt, and sugar
Whisk in milk, egg, and melted butter until smooth
3. Cook the Pancakes:
Heat a non-stick skillet over medium heat and lightly grease with butter or oil
Pour about ¼ cup of batter onto the skillet
Quickly pipe a spiral of the cinnamon mixture onto the batter before it sets
4. Flip & Finish:
When bubbles form on the surface and the edges look set, flip the pancake carefully.
Cook for another 1-2 minutes, until golden brown
5. Make the Cream Cheese Glaze:
Whisk softened cream cheese, powdered sugar, milk, and vanilla extract in a small bowl until smooth
6. Assemble & Serve:
• Stack the pancakes and drizzle generously with the cream cheese glaze
